Mediterranean Veggie Nachos 

Learning to make healthy snacks is part of my “new year, new me” situation. Paula Hankin from Clueless in The Kitchen is one of my besties and a fabulous chef! I asked her to show me some SIMPLE, yummy snacks that are kid-friendly and easy to make at home. For some of you (or probably most of you), making healthy snacks for your kids probably seems like an obvious and easy thing to do. Simple, healthy recipes might not seem life changing, but for me, my idea of a snack is a bag of Pirates Booty or a sliced apple!
It’s nice to learn unique recipes and fun ways to put a new spin on and old snack, especially when it comes to healthy ones that my kids won’t refuse to eat!
I plan on sharing some of Paula’s yummy recipes for the next few weeks. Paula can do it all, so if you have any ideas, or something you might want her to show us how to make, comment below and ill ask her to teach us! Paula is a private and small events chef and culinary consultant. She is known for inventing delicious recipes as well as teaching people how to eat healthy. I can’t believe she is a self-trained chef ! Watch out world, Paula is one of a kind!!

Mediterranean Veggie Nachos  (great game day snack!)

Ingredients:

1 large washed (peeled optional) cucumber

4 tablespoons of hummus

1/2 red or yellow bell pepper, chopped

3 tablespoons of feta cheese

5-6 black pitted olives

5-6 chopped cherry tomatoes

Directions:

Slice cucumber in 1 1/2 inch circles

Then top with ingredients start with hummus first to hold the other toppings (there is no right way to do it – experiment!)
